1531 - The process of turning still wine into sparkling wine was discovered

The method of converting still wine into sparkling wine was discovered in 1531 by a monk in the Languedoc city of Limoux.  Even though it is untrue that Dom Pérignon “invented” Champagne, the Benedictine monk still contributed a number of significant contributions to the development of French wine.
