June 29, 1912: On this day, Émile Peynaud was born in France. He is considered a revolutionary figure in wine making and oenology, as his work in chemical engineering, especially his experiments regarding the control of malolactic fermentation, reshaped the entire field of oenology. He obtained his PhD from the University of Bordeaux, where he also worked as a lecturer.
