December 22, 1986: On this day, Pauline Lhote was born in Champagne, France. Pauline was raised on a farm in Champagne, and told her parents as a youngster that she wanted to manufacture sparkling wines. She began her career at Nicolas Feuillatte and Mot & Chandon before becoming the director of Domaine Chandon in Napa Valley, the first French-owned sparkling wine producer in the United States.
