December 22, 1986: On this day, Pauline Lhote was born in Champagne, France. Pauline was raised on a farm in Champagne, and told her parents as a youngster that she wanted to manufacture sparkling wines. She began her career at Nicolas Feuillatte and Mot & Chandon before becoming the director of Domaine Chandon in Napa Valley, the first French-owned sparkling wine producer in the United States, where she just completed her 15th harvest. “We infuse Chardonnay’s innate elegance into By The Bay to create a modern wine that is luxurious but still subtle and fresh,” Lhote says of this wine, which is her “homage to Napa and the San Francisco Bay Area.”
